Pearl sugar Our Pearl sugar (also known as 'nib sugar' or 'hail sugar') is a product of refined white sugar and is 100% sucrose. - Available in a comprehensive range of granule sizes. - The polished nibs will not tear the packaging of the final product. - Minimal to zero product losses thanks to the absence of dust in the bags. - The perfect white aspect of the nibs is maintained during the baking process due to the utilisation of EC Number 1 white sugar crystals. Features & benefits - The sugar nibs do not melt entirely giving crispness and delicious texture to baked products such as waffles and sugar bread due to the nibs high melting tolerance and dissolving time. - The larger HS 5.6 and HS 9.5 nibs are perfect for blending in risen dough for the production of waffles, puff pastry buns, sugar bread etc. Typical decoration applications are pastries, butter cookies. Application - Small HS 3.2 nibs are mostly used for decoration purposes. In Belgium, it is used in Liege waffles, while in Friesland (a northern province in the Netherlands) it is used in sekerbele (sugar bread). In Germany it is known as hagelzucker and traditionally used on Christmas cookies and cinnamon buns. In Scandinavia, muffins and buns, especially on top of plain Swedish bulle or Finnish pulla cakes, cookies, perlsocker is used extensively to decorate various pastries and confections, such as kanelbullar (cinnamon buns) and chokladbollar. Pearl sugar in general is also known as perlsocker in Sweden, except Finland, and as perlesukker in other Scandinavian countries, where it is called helmisokeri or more commonly raesokeri ("hailstone sugar").
